イタリアで各地方で修行をし、都内中目黒でシェフを任せられた実力派イタリアンシェフ。
イタリアの伝統料理を再構築し季節感溢れる食材を取り入れたイタリア料理です。
そして現在、日本で出会ったシェフやパティシエと共に、新しいスタイルの美味しさを３店舗で展開しています。
